We put our hearts into our soba, from flour milled using buckwheat grown on our own farms to noodles made by our skilled craftspeople.

We take responsibility for each step from planting through flour milling

Our soba has a rich, fresh-milled aroma, since we handle each step from planting the grain to milling the flour ourselves. We insist on selecting buckwheat varieties that are well suited to the climate and surroundings at the foot of Mt. Akagi, and we grow buckwheat that is optimized for each season. Every morning, we mill flour from whole buckwheat, preserving the fresh-milled aroma, while shaking the grain expertly to draw out its maximum aroma and taste. We're certain you will enjoy our fresh-milled, fresh-pressed, fresh-cooked soba.

Why is the foot of Mt. Akagi so well suited to growing buckwheat?

The foot of Mt. Akagi is a perfect location for growing buckwheat.
Its cool summers and cold winters, and the difference between its day and night temperatures, give the soba a rich flavor. Its mineral-rich volcanic soil drains well and helps the buckwheat to grow healthy.
Its stable supplies of pure ground water and spring water draw out the flavor of the soba even more.

Sofuan's carefully selected buckwheat

Sofuan's buckwheat is distinguished by its resemblance to a starry sky, due to a small number of light flecks mixed in with the dark buckwheat grains. Pressed flat into fresh-milled, fresh-pressed, fresh-cooked soba, it delivers outstanding flavor and relish, along with an exquisite elasticity that goes down smoothly. A bite of our soba tastes like nothing else in the world.
Our stock-based soba sauce is rich with the savory aroma and flavor of dried bonito. It combines dried ingredients like bonito, bullet mackerel, chub mackerel, and Pacific saury carefully selected with consideration for the way their flavors may differ by season and year.

How to enjoy soba

Even a first-timer can enjoy soba to the fullest
by following the steps below.

Taste the soba

Soba may be served both cold and hot.
Eat cold soba by dipping the noodles lightly in the small dish of sauce (tsuyu). Too much sauce will overpower the flavor of the soba. We recommend dipping the noodles about one-third of the way into the sauce.
Enjoy hot soba served in sauce. The flavor of the warm broth goes perfectly with the aroma of the soba noodles.

Use condiments
for a variety of flavors

Soba is served with a variety of condiments, like wasabi, green onion, and grated daikon.
Add your choice of condiments to the sauce to enjoy a wide range of flavors. Find your own personal favorite blend of tastes.

Try sobayu (soba broth)

We also serve clear, hot sobayu (soba broth).
This is the water the noodles were boiled in. It is rich in nutrients and flavor.
Add some sobayu to the remaining sauce to enjoy it as a tasty soup. Drinking sobayu is a part of Japan's distinctive soba culture.

Slurp as you eat

In Japan, people say that soba noodles taste better when slurped.
For a unique taste of Japanese culture, enjoy soba while making a slight slurping noise.
Take small bites, because a large bite requires stronger slurping that could cause the sauce to splash around.
